Garlicky hummus is Israel’s national dish, one that inspires best-selling books, prompted a headline-making heist, and is said to cure physical and mental ailments

In the 1960s and early 1970s when Americans were traveling abroad, they often came back with the taste of garlicky hummus on their breath. The mixture of chickpeas and tahini, or sesame seed paste, was delicious, it was exotic, and later, with the advent of the food processor, it was easy to prepare. When I lived in Jerusalem in the early 1970s, I fell in love twice—first with the man who would become my husband, and second, with hummus. When I got married in 1974, I requested hummus at my wedding and gave the caterer a recipe for the dip. One person who had never tasted this before thought my recipe—with its hint of that exotic spice, cumin—was so good I could sell it to Zabar’s. I didn’t heed the call but others did, and today hummus is marketed around the world.

In the early 1970s the only ones selling hummus (which also means “chickpeas” in Arabic and modern Hebrew) in the United States were Middle Eastern ethnic stores like Sahadi’s in Brooklyn, which has been catering to the Arab community since 1895, when Abraham Sahadi immigrated from Lebanon. “In the early 1970s we had outside contractors making hummus for us or we would buy it already prepared from the Middle East,” Charlie Sahadi, Abraham’s son, told me as we browsed the shelves of his store. “In 1985 our hummus was so popular that we put a deli in the store. Today you go to a specialty food store and you see seven varieties of Americanized hummus: sun-dried, basil, pepper, black bean … I don’t know what [it is], but it isn’t hummus.”

When I was recently in Israel, I met with Yehuda Litani, a former correspondent for Haaretz and the co-author, along with the Druse poet Naim Ariedei, of Not on Hummus Alone, an Israeli best-seller published in 2000 about hummus’ culture and history. (The book is not available in English yet.) A hummus purist, Litani almost choked when I told him that I throw a preserved lemon in my version. “Don’t tamper with my hummus,” he told me while we were driving around Jerusalem. Then he added, rubbing salt in the wound, “Whoever makes good hummus can’t speak English. Whoever speaks English can’t make good hummus.” To research his book, Litani visited 1,200 hummus haunts in Israel, and he sent Arab friends to check out hummus places in Syria and Lebanon.

Litani likes hummus so much that he eats it every other day. He told me that at Jerusalem’s renowned Hadassah hospital, “the psychology department recommends that people eat hummus to calm the nerves twice a week.” In 2005, 75 tons of chickpeas were stolen from Kibbutz Einat, and this hummus heist became news.

It is not a surprise, then, that Litani hears from many people about their passion for hummus. The novelist Meir Shalev contacted him, saying that the first hummus reference in print was in was in the second chapter of the Biblical Book of Ruth. “And Boaz said unto her at mealtime, ‘Come hither, and eat of the bread and dip thy morsel in the chometz’ ” which most translations call vinegar but was probably chickpeas, which ferment quickly. According to Shalev, whom I reached in Jerusalem, the letters “chet” “mem,” and “zadek” are the same letters that make up the words for chamootz (which means vinegar) and chimtza (hummus). “In biblical Hebrew there were no vowels, so words were more confusing,” he said. This first recipe for hummus, more than 3,400 years old, would have probably been a paste of cooked chickpeas (called chimtza in classical Hebrew) mashed with a mortar and pestle and mixed with lemon juice, tahina, and perhaps salt. “Anyway, if Boaz served his workers pita dipped in vinegar instead of something more substantial like hummus, they wouldn’t have been very happy,” said Shalev.

“Hummus places in Israel and Palestine are like Starbucks in the States,” said Litani, as we dipped our warm pita bread in hummus at Ikramawi, one of his favorite joints in Jerusalem. It was 11 o’clock in the morning, and workers were coming in to eat the dish, served in a dark amber ceramic bowl with white stripes, sprinkled with fava beans (or foul, in Hebrew), pine nuts, and ground meat. As Mr. Litani speaks good Arabic and is friends with the owner, we were served a particularly delicious warm hummus with hints of garlic, parsley, and cumin.

The other place we visited was Abu Shukri in Beit Hannina, a suburb of Jerusalem, near Ramallah. As we entered, we passed a man praying on his prayer rug. It was noon, late for hummus. In a nearby bakery, we also saw cooked, creamy eggs for sale, similar to the overnight eggs that Sephardic Jews put in their hamim (Sabbath stew).

I know Abu Shukri’s hummus well. Years ago I learned to make hummus by watching Abu Shukri’s father, then an elderly gentleman, at his other shop near the 5th Station of the Cross in the Old City of Jerusalem. He stirred the warm chickpeas in a cauldron, pounding with a mortar and pestle and ladling them out to customers as they came for breakfast early in the morning. My boss at the time, the mayor Teddy Kollek, considered it his favorite place to eat.

Fath Shukri, Abu Shukri’s son, told us that his chickpeas are soaked for a day, then cooked in a large vat with water and a tiny amount of baking soda starting at about 3 a.m. Later, when they are soft, they are blended in a large robot coupe or food processor. “He knows by tasting how much garlic and tahina to put in his hummus,” Litani said.

Inside his son’s shop we tasted his delicious hummus; it has a bit more chickpeas in it than some others I’d tried. Then he served us Msbaha, a dish I had never tasted before, lighter than the typical hummus. A deconstructed hummus with tahina sauce, drizzled with olive oil and sprinkled with chickpeas on top, it is eaten in the summer months.

Besides the use of a food processor, the only difference between hummus-making in the ’70s and now is the type of chickpeas used. About five years ago the Volcani Institute of Agricultural Research in Beit Dagan, Israel, developed a new kind of chickpeas whose peel dissolves in cooking: The Arabs call it the “kibbutz” chickpea, and the Israelis call it “hadas.”

After years of hummus-making I have concluded that despite the temptation to use canned chickpeas, the flavor is much better when it is made with the tiny Turkish, Bulgarian, or Israeli dried chickpeas found in Middle Eastern stores. First I soak a large quantity overnight, cook some, and then drain and freeze the rest in two-cup batches in plastic bags. Whenever I need them for hummus, falafel, or for the many chickpea soups and stews I make, I just take them out of the freezer. When substituting canned beans, figure one cup of raw chickpeas equals two cups of cooked or canned. I add to my hummus a little bit of cumin and, despite Litani’s objection, throw in a preserved lemon that blends beautifully with the garlic and lemony flavor and tastes so good.

1 cup dried chickpeas
1 cup tahina
1 preserved lemon
1/4 cup lemon juice, or to taste, including
2 cloves garlic, or to taste
½ teaspoon ground cumin, or to taste
3 tablespoons extra virgin olive oil
2 tablespoons pine nuts
Dash of paprika or sumac
2 tablespoons chopped fresh parsley or cilantro
1 teaspoon salt
Freshly ground pepper to taste

1. Put the raw chickpeas in a bowl with cold water to cover and soak overnight.

2. Drain and rinse the chickpeas, then place them in a heavy pot with enough cold water to cover. Bring to a boil, skim off the scum that accumulates, then simmer, partially covered, for about an hour or until the chickpeas are soft and the skin begins to separate, adding more water if needed.

3. Drain the chickpeas, reserving about 1 ½ cups of the cooking liquid. Set aside ¼ cup of the cooked chickpeas for garnish. In a food processor fitted with a steel blade, process the remaining chickpeas with the tahina, preserved lemon, lemon juice, garlic, salt, pepper, cumin, and at least ½ cup of the reserved cooking liquid. If the hummus is too thick, add more reserved cooking liquid or water until you have a paste-like consistency.

4. Heat a frying pan and add 1 tablespoon of the olive oil. Spread the pine nuts in the pan and stir-fry, browning on all sides.

5. To serve, transfer the hummus to a large, flat plate, and with the back of a spoon make a slight depression in the center. Drizzle the remaining olive oil and sprinkle the reserved chickpeas, pine nuts, paprika or sumac, and parsley or cilantro over the surface.

Serve with cut-up raw vegetables and warm pita cut into wedges.

Note: You can also add cayenne pepper to the hummus. Sometimes leftover hummus tends to thicken; just add some water to make it the right consistency.

Yield: About 4 cups, or 6 to 8 servings

8 lemons, about 1 ½ pounds
1/2 cup coarse kosher salt (about)
1 cup fresh lemon juice, plus more if necessary
2 tablespoons olive oil

1. Cut off the ends of each lemon. Cut each one lengthwise into quarters, cutting to but not through the opposite end. Sprinkle 2 tablespoons of salt into the cut sides of each lemon.

2. Put the lemons in a large jar (it’s fine if you have to squeeze them in; they will shrink), and cover completely with lemon juice, using a heavy stone to keep them down. Let sit for a day.

3. The next day, weigh the lemons down with a stone or, if not covered with lemon juice, seal them with a thin film of olive oil over the lemons. Put the jar in the refrigerator and allow to cure for 2 to 3 weeks. Before using, scrape off the pulp if desired.

Yield: 8 preserved lemons

¾ cup tahina
½ cup lemon juice
¼ cup warm chickpeas
1 clove garlic
1 cup roughly chopped Italian parsley
1 to 2 tablespoons of extra virgin olive oil
Salt and freshly ground pepper to taste

1. In a food processor fitted with a steel blade, puree the tahina, lemon juice, and garlic until smooth. If the tahina is still too thick, add a few tablespoons of water and it will thin down and become a pleasing white color.

2. Add the parsley and salt and pepper and pulse until blended. Adjust the seasonings and put in a flat bowl.

3. Drizzle some olive oil over all, scatter the warm chickpeas on top, put in the microwave for about 10 seconds, and serve.

Yield: about 1 ½ cups or 4–6 servings as a dip.

Heaven forefend! While hummus places may be as ubiquitous as Starbucks, doesn’t this piece describe the exact opposite of the uniformity of Starbucks? Let a million hummus styles bloom!

And while we’re on the topic of hummus, are there any plans to challenge the recent demonstration of Lebanese hummus supremacy, in quantity, if not quality? This is a competition we all should welcome – make hummus, not war!

While hummus is hardly the acme of Palestinian cuisine, it is worthwhile to remember that hummus bitihina is just one more thing that racist genocidal ethnic Ashkenazim stole from the native Palestinian population. In a sense, claiming Hummus as Israeli cuisine is the culinary assertion that Jews may plunder and kill non-Jews with impunity:

1) Here in post-modern Santa Fe it is impossible to find a good tub of hummus. The shelves are stocked with dozens of wacky new age flavors, overfilled with raw garlic and 2 days away from fermenting. But just try to find plain hummus you are out of luck.

2) What is with your aversion to techina? I realize techina is the most expensive ingredient in hummos but it is not real hummus without a creamy mealiness of techina. You can’t eliminate the techina and pretend the bleu cheese, cilantro or chipotle makes up for it. Because hummos without techina is just mashed chickpeas In fact, is hummus even genuine hummus without techina? Shouldn’t there be a law against selling hummos without techina?

3) Please consider adding lemon juice, which by the way is ethnically appropriate. Your hummus is fermenting because you refuse to add lemon juice. You need to know that hummus is a bulky vehicle for techina and lemon juice which are in counterpoint. Like the sweet & sour of asian cooking.

4) For the sake of haShem please get a pressure cooker and cook your chickpeas properly. I realize Santa Fe is at 7,200 feet elevation, but you can’t make up for undercooked peas by thrashing them in the processor. This also applies to Boulder, which is another hotbed of bad hummus. Get rid of that spinning blade thing and run the hummus through the old fashioned grinder. You may need to run it through a few times to get the consistency right, but yum.

5) Last but not least, quit selling hummos as a diet food. You just wreck the hummus when you do that.

I’ve been trying to research the history of hummus in the United States for a history of food paper for ages now. My hope was to explore its beginnings in the alternative lifestyle/hippie world and its recent acceptance into the mainstream grocery case. However, I’ve been coming up short in my resources. It sounds like the books may not yet have been written, at least in English. I’m so excited to actually have at least one really good article now. Thanks so much!

Dear Joachim Martillo — Your position is preposterous. Did the Jews also steal all the food they integrated into their cuisine while in the diaspora in Europe? In any case you have a confusion about Jewish ethnology. Ethnic Ashkenazim were unique among Jews in that membership in the Ashkenazi ethnic group implied Jewish religious practice by the member or his near ancestors.

As a separate ethnic group Eastern European ethnic Ashkenazim had their own language as well as some unique foods that were identified as uniquely Jewish by Russians, Poles, Ukrainians, and Czechs or as uniquely ethnic Ashkenazi by Polish Tatar Jews.

In contrast Jewish Arabs were Arabs that practiced Jewish religion, it is hard to identify uniquely Arabic Jewish foods among Jewish Arabs except for a few foods that were associated with Jewish ritual and that were usually very different from comparable foods among ethnic Ashkenazim.

Joachim Martillo, Jews who grew up in Arab countries brought these different ethnic cuisines with them. The different cuisines from all of Israel’s communities mixed together in a way that is unique to Israel: thus shnitzel (German) being eaten with humus (Arab), shwarma (Ottoman) being seasoned with amba (Indian via Iraq’s Jews), or bourekas (Ottoman) and jachnun (Yemeni) being served at the same cafe.

There are no Jewish Arabs but Jews from Arab countries. They were never Arabs, did not self identify as Arabs (as the Arab identity is a modern invention) and not seen as Arabs by Arabs. The Jews are a middle-east people not a religion like the Kurds or the Iranians – as DNA studies did indeed prove.

People who say that Israel is racist are only propagandists who don’t look at facts, because Arabs are treated way better in Israel than Jews were treated in Arab countries, from which they were violently expelled. And to say that this people is “genocidal,” after being the victims of true genocide (while the Palestinians == who enjoy Israeli healthcare and subsequent higher infant survival rates than in most of the Arab world), is just a complete reversal of fact.
